
Ingredients
- 220g dates – pitted. I use Whitworths
- 1 heaped tbsp peanut or almond butter
- 1-2 tsp cocoa powder
- 1tbsp chia seeds
- 60g oats
- Dessicated coconut
Method
In a blender or food processor, pulse the dates until they form a ball
Add all other ingredients except the coconut, and blend to combine, scrape sides of blender to make sure nothing is missed.
Use a teaspoon to take a dollop of the mixture, roll between your clean hands gently to form the ball shape. Repeat until all the mixture is used (creates approx 16 balls)
Sprinkle dessicated coconut on a plate, and roll each ball through it to coat them.
Roll in hands again to help the coconut stick to the mixture.
Place on a plate or container into the fridge, chill for 20 minutes before serving.
Store spares in an airtight container in the fridge.
