
Coleslaw – Vegan and gluten-free
Ingredients
1 large carrot (approx 250g) – peeled and grated
1/4 of a large white cabbage – finely sliced
1 onion, finely sliced
1 apple, diced into 1cm cubes (preferably green)
3tbsp vegan mayo
Coarse ground black pepper – to taste
Handful of sultanas (optional)
Method
Prepare apple and vegetables as indicated above, put in large bowl.
Add in vegan mayo tablespoon at a time, and mix well. You may decide to use more or less mayonnaise depending on taste, and amounts of vegetables used.
Add approx 1/2 tsp coarse ground black pepper, mix well.
Add sultanas if desired, and mix.
