Granola with nuts, seeds and fruits

Ingredients
2 tbsp melted coconut oil
150ml maple syrup
1tsp vanilla extract
Pinch of salt
1tsp cinnamon
350g oats (split into 100g & 250g)
100g mixed seeds (sunflower, chia, flax, pumpkin etc)
200g mixed nuts (almond, peanut, Cashew – to taste)
Handful sultanas/ other dried fruit (optional)

Method
Heat oven to 150C
Line a large baking tray with greaseproof paper
Blitz 100g of the dry oats in a blender until it looks like a fine dust. Mix together in a bowl with the coconut oil, maple syrup, vanilla extract, salt and cinnamon.

Give the nuts a quick blast in a blender, leaving some larger pieces. Add to the mixture with the rest of the oats, and seeds. Mix well.

Place on the greaseproof lined baking tray, spread evenly. Take a second sheet of greaseproof paper, lay it on top and press the mixture down firmly all over. Remove this top sheet, and put the mix in the oven for 10 minutes.

Remove from oven, seperate the mixture using a fork, leaving some slightly larger pieces in tact. Return to oven for a further 15 minutes.

Remove from the oven, and cool. If adding sultanas and dried fruit, mix these together now with the cooled mix.

Stores well in a sealed jar. Best served with warm nut milks.
