
Simple tofu scramble
Ingredients:
1/2 a block of firm tofu (I use Cauldron) – drained from as much water as possible
1/8 tsp salt (any salt, but I use black salt to give eggy flavour)
1/8 tsp ground tumeric
A little ground black pepper
Method:
After draining the tofu, roughly slice, then use a fork to mash into tiny pieces, resembling scrambled egg texture. Mix in the salt, pepper and tumeric, combining well. Add a tbsp of water if mixture is too dry, the tumeric should easily coat all the tofu.
Add a little oil to a small frying pan, heat on low.
When the oil is hot, add the mixture in and cook for a few minutes, until piping hot throughout, stirring often.
Serve!
Lovely topped with a little freshly cracked black pepper, chilli flakes or spring onions.
