Salt and chilli chips

Salt and pepper chilli chips. Vegan and gluten free.

Ingredients (serves 2)

Frozen chips (cooked to pack instructions – two servings worth)
1 onion, chopped
1 red or green pepper, sliced (or half and half)
1 red or green chilli, chopped (or half and half)
1/2 tsp sugar
2 tsp salt
2tsp Chinese 5 spice
1/2 tsp chilli flakes
1 1/2 tbsp Cooking oil

Cook the chips according to pack instructions, while they are cooking chop all the ingredients
Mix the sugar, salt and spice together with the chilli flakes.
When the chips are cooked, place aside to cool slightly.
Meanwhile, heat the oil in a wok, and add the onion and fry on a medium heat for a couple of minutes, then add the chilli and pepper and continue to fry until the veg starts to brown.
At this point add the cooked chips to the wok, and the spice mix, and mix well.
Continue to stir until everything is well coated in the spice mix, and until everything is hit throughout.
Serve!
